Marinated London Broil, Grilled
This charcoal-grilled marinated London Broil recipe is another oldie but a "goodie", and it fits in well with any limited carbohydrate regimen. It's not low in sodium, though, since it's marinated in Worcestershire and soy sauces. Each serving has about 8g of carbs (depending on serving size).
Ingredients
- 2 lbs. London Broil, trimmed
- 1/4 cup Worcestershire sauce
- 1/4 cup soy sauce
- 2 tsp. granulated garlic
- 1 tbsp. dehydrated onion flakes
- 1 tbsp. dried parsley flakes
Preparation
Cut London Broil across the grain, into approximately 2-inch wide strips. Place in a square 8" x 8" glass baking dish or similarly sized plastic container. Pour Worcestershire sauce, soy sauce over and around the London Broil. Sprinkle granulated garlic, onion flakes over top of meat. Turn meat over, and sprinkle granulated garlic and onion flakes over the newly-exposed surface. Sprinkle a moderate amount of parsley over the top of the meat. Cover, refrigerate overnight, turning the meat after about 8 hours. (You can put the marinade and meat in a zip-top plastic bag and turn over the bag after 8 hours if you prefer.)
To cook, grill on the BBQ over hot coals approx. 4-5 minutes per side (time will depend on heat, distance from coals, etc., so you might want to use an instant-read meat thermometer, removing from coals when the meat reaches the desired internal temperature (130°F for medium rare).
Remove to a platter, let rest a few minutes, and serve immediately. We slice the London Broil strips into very thin slices before putting them on the plate for serving.
Serves 3-4 people depending on appetite.
