Description

Fried Eggs topped with chile verde pork makes a delicious quick meal.

Ingredients

2 eggs
1dssalt (to taste)
1dspepper (to taste)
2Toil
4ozchile verde pork
2 corn tortillas (warmed in a steamer (optional))

Notes

Teri introduced me to this a few weeks ago. It's delicious, satisfying, and protein-packed.

Instructions

Heat chile verde pork in a pan over low heat.

Fry the eggs in a small non-stick skillet over medium heat, to your liking (over easy, over medium, etc.) Season egg with salt and pepper if desired.

Transfer to a warmed serving plate. Cover with warmed chile verde. Serve with corn tortillas if desired.
