Easy Cabbage Salad
This one isn't the most exciting recipe we use, but it's simple, tasty, and makes a great addition to a reward meal (RM) or other meal or diet that allows a small amount of carbohydrates (there are about 4 grams of carbohydrates–2g fiber and 2g from sugars–in a cup of shredded raw cabbage.)
Ingredients
- Half head of cabbage, shredded (about 2 cups)
- 4 tbs real mayonnaise (adjust to desired consistency)
- Freshly ground black pepper, to taste
Preparation
Toss all ingredients in a large bowl to mix thoroughly. Serve promptly. (See, we told you it was simple!)
Serves two to four people, depending on serving size (we usually serve it in two larger bowls, serving two adults).
