Coconut flour

Teri, thanks for the recipe. I finally found some coconut flour at a health food store. I haven't had a chance to check out the Asian markets your DH spotted for me. Tight schedule through the rest of the year. Anyway, I'm eager to try those biscuits. Question: did they taste very sweet? I'm thinking about the 1/4 cup honey.

On the topic of coconut, THANKS for the tip about unsweetened coconut and its impressive fiber content. Great find, and everything seems to be moving along smoothly. :-)

Drop Biscuits

Even though there is 1/4 cup of honey in the drop biscuit recipe, I did not find them too sweet at all. As a matter of fact, they are really delicious and so easy to eat that we must limit ourselves because of the fiber content.

I made the cheese biscuits, adding some garlic to them, and they were good. I did not find them as good as the drop biscuits, but that is probably because they do not have any sweetener added to them.

I hope your family enjoys the biscuit recipes as much as mine!

I made those coconut flour biscuits again this morning with a slight recipe change. Substituted 1/4 cup granulated Splenda for the 1/4 cup honey. They came out really well, didn't stick to my cookie sheet at all (well, I did spray it with coconut oil). DH loved them; DD7 not so much. At any rate, I figure about 1 gram effective carb per biscuit (as the Eades calculate it) and for my purposes they can be CM food. Actually, this recipe reminds me of some of the CM bread recipes at the end of the original Carbohydrate Addicts book.

I bet if the Hellers were still refining their eating program, they'd add "The Wheat Free Option" to the LifePlan options.

One more thing...I'm down 1.6 pounds since we got back a few days ago...weight this AM 176.8#, so I'm feeling pretty fired up with this way of eating!

Drop Biscuits v. Coconut Bread

I am happy with my new wheat and gluten free lifestyle. I am still waiting for my "Wheat Belly" to disappear and I am still happy to be putting in the time eating a diet that is 100% directed by me!

I like the drop biscuit recipe but I have been having problems getting them out of my muffin pans I have. When I tried to bake them on a cookie sheet, they ended up looking like pancakes, which my husband loved. He added some butter and maple syrup and enjoyed a couple of them.

I have only made the coconut bread recipe a few times and I am not sure which one I like best. I think the coconut bread recipe can taste a bit dry and I don't remember the drop biscuits tasting that way at all. I am anxious to make some more drop biscuits and can see a new muffin pan in my future!

I love how much I enjoy the food I eat!

Drop biscuit experience

Good evening, Teri!

I made those drop biscuits again at DH's request. I again substituted 1/4 cup of granulated Splenda for the 1/4 c. honey. However, I was very dismayed to see my batter all soupy and liquidy and couldn't understand why it was so different from last time. I thought I was going to have to add a bunch more coconut flour to it, then suddenly it was the perfect consistency for drop biscuits. I dropped 'em on a cookie sheet pre-sprayed with coconut oil, and they came out perfect.

Here's what I THINK happened. I had melted the coconut oil which was a soft solid in my pantry. I forgot what I was doing for several seconds and left it in the microwave too long, so it got pretty warm. So when I first had the batter all together I thought what on earth am I going to do, this is going to run all over the place. Then in about a minute, the coconut oil, now dispersed throughout the batter, must have reverted to soft solid form (my eggs were straight from the refrigerator and must have cooled everything down) and voila!

I actually made a double batch tonight since they keep well, reheat, and are good cold when you want to pretend you're having a sandwich or a sausage and biscuit which we do here in the South quite a bit. Plus, if I did my math right, these things are loaded with protein as well as quite a bit of fiber.

Good luck with them! I'm going to get that cooking with coconut flour cookbook.

I'm Teri. I am 52 years old, and I've been overweight most of my adult life. My diet and exercise program have me feeling better than I have ever felt before. I have lost close to 100 pounds since I began the Carbohydrate Addict's Lifespan Program in 2008, without starving or depriving myself in any way.
