cooking with coconut

How did that coconut flour crust work out? I made the coconut cream pie and the frozen coconut pie, but without the crust. DH liked them both, with the coconut cream pie being the favorite.

Coconut Pie Crust

Sorry for the delay in answering your question but I have not had any extra time to spend on my computer recently.

Both of the coconut pies that you made sound delicious!

I have made two different coconut crust pie recipes. The first pie crust I tried included dessicated coconut and the other pies were made with coconut flour. The coconut pie crust that was made with the dessicated coconut was moist and delicious and the coconut flour recipe was more like the flour based pie crusts I used to eat.

The only problem I found with the coconut flour crust was that it was a bit thick in places since I used my hands and fingers to spread it into a pie plate. The next time I make a pie I will be using the recipe using the coconut flour and I will place the dough between two layers of parchment paper so I can use a rolling pin to achieve a much more even crust.

Needless to say, I am extremely happy with coconut and I will continue to use it in every form possible!

Still gluten free in Arkansas

Just thought it was time to pop in with an update on gluten free living. DH and I are still wheat-free and definitely seeing some benefits. For DH, the IBS symptoms are so long gone that I forget to check in with him to see if it's still true (I asked just now and he says it is). Otherwise, we're mainly noticing less arthritic aches and pains. For me it's the knees. I used to dread going down any stairs. I would grip the handrail, turn sideways, flex at the hip, and go down one step at a time instead of on alternating feet like normal people. Now I go down facing forward, alternating feet; sometimes I don't even hold the handrail, just to prove I don't have to. For DH the pain in his shoulder used to wake him up after just a few hours, forcing him to get up and seek a more comfortable place: couch, recliner, guest bed, whatever. Now he sometimes sleeps till 5 or 6AM.
And did I mention I'm sleeping like a baby? I don't think I've slept this well since I was in my 20s. For whatever reason.
I didn't even realize how dramatic this would sound till I started typing it out. It's just happened gradually over the past couple of months and totally blended into our daily lives.
At first I though it might be too challenging to stay gluten-free; wheat is so all-pervasive in our world. But the discovery of versatile and delicious coconut (coconut flakes, coconut flour, coconut milk, coconut oil) thanks to the LowCarbCompatible website has made it so much easier than I ever thought.

What a wonderful post!

I am so happy to hear the positive affects of avoiding wheat and gluten has had in your family. Since I am unaware of any problems I may have had while I was including wheat and gluten in my diet, I can only imagine how much better your DH feels now that he is no longer experiencing the discomfort wheat and gluten had on him.

I am thankful that you are willing to share your experiences with us and I will continue to look forward to hearing how you continue to manage your low carb, wheat, and gluten free diet!

I'm Teri. I am 52 years old, and I've been overweight most of my adult life. My diet and exercise program have me feeling better than I have ever felt before.
