About me
I'm Teri. I am 52 years old, and I've been overweight most of my adult life. My diet and exercise program have me feeling better than I have ever felt before. I have lost close to 100 pounds since I began the Carbohydrate Addict's Lifespan Program in 2008, without starving or depriving myself in any way.
I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day. This will be my lifelong way of eating because I am happy to say that it comes natural to me!

Teri, I just don't know how you do that one meal per day thing. If I forced myself to hold out for a single RM, by the time I got there I'd be so famished I'd eat outrageously. I noticed you were traveling, and CM has always been a big issue when I'm on the road.
I got my Cooking with Coconut flour book today. Can't wait to try some recipes. I started reading some of the introductory info at the beginning and I had no idea that coconut oil was so different and better than other oils. Fortunately, this is one thing I can find in my local supermarket.
I made the drop biscuits again this morning at DH's request. He is finding they are a great staple in the gluten-free diet. Which BTW seems to have completely cured his IBS symptoms! Yay.

Home Cooked Meals Preferred!
My daughter was here visiting for a week and a half and was ready to return home, so I took her to Monterey. I made sure to eat my lunch before we left and after dropping her and her new puppy off at her house, I went to the store and KFC for our dinner. I stayed the night, not knowing whether I was returning home the following day or the one after that.
The next morning I had a few errands to run so I headed out. I still had some Christmas returns to make and there was a Macy's close to her home so I left my daughter and her puppy at home. I was out of the house so early that I had to wait for Macy's to open and as soon as they did, I made my returns.
My next stop was Costco. My daughter gave me her grocery list so I got what I could at Costco before getting the rest at the grocery store. I thought I could get some coffee at Costco but I did not see any so when I left, I stopped at McDonald's for a cup before getting the rest of her list at the grocery store.
It was around 12:30 p.m., when I decided to try and beat the rain and headed for home. I had just finished my coffee and my only food choices were to stop for fast food or head home to a much more satisfying meal. If I do not have to worry about anyone else eating when I do, I would much rather skip a meal than eat something I will not be happy with.
I ended up stopping at a Costco on my way home to fill up my gas tank and purchase the items on my grocery list. Needless to say, I was hungry when I got home and the first thing I did after unloading my car was to make my husband and me our salads. He started the barbecue and our steaks were ready as soon as I finished my salad. I was actually surprised when I was unable to finish my entire steak since I normally have no problem, but I had enough. I grabbed a tangerine and I was completely satisfied when I finished my meal.
The problem with me skipping meals is the possibility of making them up the following day since I seem to be hungrier than normal.
The drop biscuits are delicious and I am happy you and your husband are satisfied with your gluten free lifestyle.

Hi, Teri! Thanks for your comments. We're on the same page when it comes to preferring home meals. Yesterday, DH mentioned using one of our gift cards to eat out last evening, but we came to the conclusion we prefer our own food. Plus, I think it's easier for us while we let this gluten-free thing become inGRAINed (har). We both notice we are spending more time in the kitchen, fixing and cleaning up; which may get old. But I hope not, because we are enjoying our food a lot these days and finding baking from scratch very satisfying.
I'm headed to the kitchen to try the blueberry pancakes from the Cooking with Coconut Flour recipes. DD7 is going to help!
