About me
I'm Teri. I am 52 years old, and I've been overweight most of my adult life. My diet and exercise program have me feeling better than I have ever felt before. I have lost close to 100 pounds since I began the Carbohydrate Addict's Lifespan Program in 2008, without starving or depriving myself in any way.
I am getting myself into better shape and my goal of becoming fit and healthy is getting closer every day. This will be my lifelong way of eating because I am happy to say that it comes natural to me!

Baking with coconut flour
Hi, Teri! It looks like you made the drop biscuits again. Any better luck with the consistency, or were they pancakes again? I'm looking forward to getting my Cooking with Coconut Flour book, hopefully soon. I'm going to try the bread right away.

Bread & Biscuits
When I made the drop biscuits this time, I used coconut oil instead of butter. The consistency was perfect and the taste was even better. Even though the coconut bread recipe lists butter and no coconut oil in the recipe, I am anxious to substitute half of the coconut oil in the bread recipe because every time I tried it in the past, the bread was delicious but a bit dry.
Just last night my oldest daughter (visiting for about a month), went into the refrigerator and told me there were only two drop biscuits left. Since I knew I could easily make some more biscuits and/or coconut bread today, I told her to enjoy them.
The best part about making these wheat and gluten free baked goods is that they require four eggs for the biscuits and six eggs for the bread. My chickens are now giving me a half a dozen eggs a day, so between my baking and the meat and egg scrambles I have been making my son who moved into the guest house a few months ago, we are having no problem going through them.
